Why Our Omakase Works for Gluten Sensitive Guests
Why omakase sushi is well suited to guests avoiding gluten, and how REONA prepares for you.

- Soy sauce gluten is largely broken downSoy sauce is the main potential source of gluten in sushi, but at REONA the wheat used during fermentation breaks down to only trace amounts. Some guests with mild sensitivities enjoy our regular soy sauce, and gluten free soy sauce is available on request.
- No wheat in our restaurantWe use no wheat anywhere in our restaurant, and our chefs keep their hands clean throughout. We cannot remove every last risk of cross contamination, but we believe it is a low risk environment for many gluten sensitive guests.
- No gluten in our other ingredientsThe shari, including its vinegar, sugar, and seasonings, contains no wheat, and we are not aware of any other gluten containing ingredients used in our omakase.
How We Accommodate You
Every guest's dietary requirements are different. Rather than making broad promises, we prefer to understand your situation first and explain honestly what we can and cannot accommodate.
Mild intolerance
For guests with mild gluten sensitivities, some choose our regular soy sauce because only trace amounts remain after fermentation. Many have done so in the past, drawn to its fuller, more authentic flavor.
More sensitive guests
We can switch to gluten free soy sauce. Its flavor differs from the soy sauce we blend specially for our sushi, closer to an everyday soy sauce, but it does not take away from the quality of the omakase, and we recommend it for anyone who wants extra peace of mind.
Celiac and severe sensitivity
We use no wheat anywhere in our restaurant and our chefs keep their hands clean. Even so, trace amounts of wheat can be carried in from outside, for example on clothing, so we cannot guarantee the complete absence of trace contamination. For this reason we do not describe ourselves as safe for celiac or as a certified gluten free restaurant. If you have celiac disease or a severe sensitivity, please send us an inquiry before booking so we can talk openly.

Most guests simply book and note their gluten needs in the Special Request field. If you would like to confirm the details first, you are always welcome to reach out before booking.

Is sushi gluten free?
Mostly yes. Sushi itself is naturally gluten free, and at REONA the primary source of gluten is soy sauce. In soy sauce, wheat is used during fermentation, but the gluten is largely broken down, leaving only trace amounts. For this reason some guests with mild gluten sensitivities choose to enjoy our regular soy sauce, and gluten free soy sauce is available on request.

Do I need to contact you before booking?
Not necessarily. For most guests, booking and noting your gluten needs in the Special Request field is enough. If you have celiac disease or a severe sensitivity, please contact us before booking, ideally at least one day ahead, so we can confirm your level of sensitivity and prepare the right way for you.
Is there an extra charge?
No. There is no additional charge, and the price stays ¥26,000.
