We have welcomed many guests with food allergies. We tell you exactly what we use, leave out what you cannot eat, and are honest about what we cannot guarantee in a small kitchen.
AN IMPORTANT NOTE
Our chefs use the same knives, cutting boards, and cloth throughout the course. They are washed between uses, but they are shared. However carefully we prepare each dish, we cannot guarantee that there will be no cross-contamination.
Letting us know about your allergies in advance means we can leave out ingredients you cannot eat, but this does not eliminate the risk of trace contamination.
If you are sensitive to even trace amounts, we are sorry, but we recommend that you do not visit us. If you understand that a trace amount of an allergen may still be present, you are very welcome, and we will prepare your course as carefully as we can.

Tell us as early as you can
Please write your allergies in the Special Request field when you make your reservation. We will check your request and confirm the details by email. Please let us know as early as you can, preferably at least one week before your visit, so we have enough time to prepare. There is very little we can change on the day of your visit.
We adjust where we can, and leave out where we cannot
When a piece contains something you cannot eat, we leave it out of your course. We do not replace it with another piece unless we can confirm that it is appropriate for your dietary needs. The price remains ¥26,000 even if we leave the pieces out.
We are honest about the limits
If we cannot safely accommodate your needs, we will tell you. Fish, rice, and vinegar are essential to sushi, and a shared counter can never be completely free of trace contamination. If you have an allergy, please always let us know before your visit. Please write it in the Special Request field when you book, or contact us first if you would like to discuss it before booking.

Allergy by Allergy
Check your allergy below. The marks use a common Japanese convention: maru ○ for yes, sankaku △ for partially, and batsu × for no.
- We can.Nuts
Our course is made without nuts.
No dish in the course uses nuts, so for most guests with nut allergies, there should be no issue with the menu itself. However, as with all dishes served at our counter, we cannot completely rule out trace contamination.

The Signature Course contains no eggs.
The Kids Menu does include eggs, but for young guests, we can leave out items containing eggs on request.

Milk and cream are used only in the dessert.
The dessert is the only part of the course that contains dairy, but we can leave it out if you have a dairy allergy or intolerance. As our kitchen is shared, we cannot completely rule out trace contamination.

No shrimp or crab is used. Scallops, squid, and uni (sea urchin) are served, and we can leave them out on request.
We do not use shrimp or crab anywhere in the course. We do serve scallops, squid, and uni. Some guests with a crustacean allergy may also react to other types of shellfish, including squid, scallops or uni, so please let us know about your allergy in advance. We can leave any of these items out on request, but we do not provide a replacement piece, and the price remains the same. Our knives, cutting boards, and cloths are shared throughout the course and washed between uses, so we cannot completely rule out cross-contamination.
- Possible, with limits.Rosaceae Fruits
Found in the cherry blossom tea, the strawberry ice cream on the Kids Menu, and the optional celebration cake. We can leave them all out.
Cherry blossom is part of the rose family, so if you react to Rosaceae fruits, we’ll leave the cherry blossom tea off your course. We also need to be careful with a few other items. Our optional celebration cake is made with strawberry and peach, and the Kids Menu comes with strawberry ice cream. We use the same scoop for all of our ice cream flavors. We wash it between uses, but even a different flavor may still carry a trace of strawberry. If you react to Rosaceae fruits, please let us know when you make your reservation. We’ll leave these items off your course.

Green onion, or negi, is the only vegetable we use in the course. We can leave it off your pieces if you prefer.
We don’t use any other vegetables, but we can’t completely rule out trace contamination from the kitchen.

No wheat is used anywhere in our restaurant, and gluten free soy sauce is available on request. For more detail, including the limitations we have for guests with celiac disease, please read our gluten free sushi page before you book.

We cannot leave any of them out.
Every piece we serve is made with fish, rice, and rice vinegar. If you are allergic to any of these, we unfortunately cannot make our omakase safe for you, so we want to be clear about this before you make a reservation.

Please let us know before the day
Once we have finished preparing for the day, there is not much we can change. Shellfish and fish allergies in particular cannot be accommodated on the day. So please let us know as early as possible, in either of these two ways.

Make your reservation and list your allergies in the Special Request field of the reservation form. We’ll reply by email about the details, including what we use, what we leave out, and anything we need to ask you. For most guests, this is all you need to do.

Can you accommodate my food allergy?
We can accommodate many allergies, and we will explain what we can and cannot do. The Signature Course does not contain nuts or egg, dairy appears only in the dessert, and pieces with squid, scallop, or uni (sea urchin) can be left out. We cannot leave out fish, rice, or vinegar. No matter what your allergy is, please tell us at booking and we will go over the details with you by email.
How should I tell you about my allergies?
Please list them in the Special Request field when you make your reservation. We’ll reply by email to confirm the details. If you’d like to check before booking, you can send us an inquiry first.
Can you substitute the pieces I cannot eat?
In most cases, no. We leave the piece out and continue with the rest of the course at the same price. We will not replace it with another piece unless we can confirm that it is appropriate for your dietary needs.
Can you guarantee zero cross-contamination?
No. Our chefs use the same knives, cutting boards, and cloths during the course and wash them between uses. We do our best to keep the risk low, but some cross-contamination is always possible, and letting us know in advance cannot completely prevent it. If you are sensitive to even a trace, we are sorry, but we recommend that you do not visit. If you can accept that a small trace may be present, you are welcome, and we will take extra care when preparing your course.
Can I tell you about my allergy on the day?
Fish, rice, and vinegar are essential to our sushi, so we are unable to fully accommodate allergies to any of these ingredients. Please tell us in advance. Once we have finished preparing for the day, there isn’t much we can change, and shellfish allergies are especially difficult to accommodate on the day. If you are unsure, please send us an inquiry before booking.
I am gluten sensitive or have celiac disease. What should I read?
We have a separate page about gluten. We don’t use wheat in our restaurant, and gluten free soy sauce is available on request. Please read our gluten free sushi page before you book.
